Kumquat closely resembles that of the orange, but it is much smaller and ovular, being approximately the size and shape of an olive. They are often eaten raw as a grape (with the peel), since the rind is sweet and the juicy center is sour. The kumquat is ripens between November and March and tastes best if gently rolled between the fingers before being eaten to release the rind’s essential oils.
